BAR COOKIE BASE INGREDIENTS:

Bar Cookie Base

Instructions:

  COOKIE BASE
2/3cups Grated peeled cored apple
1cups Brown rice flour
1tablespoon Brown sugar
6tablespoon Margarine
  FILLING
1cups Dried fruit, chopped
1cups Hot water
  NUT SPREAD
1cups Pecans
½cups Light brown sugar

No-gluten recipe.

Knead the flour, sugar and margarine into the grated apple. Spread ¼ inch thick on a greased baking sheet. Spread with fruit filling (simmer dried fruit in hot water and stir often until thick.) Sprinkle with chopped nuts and bake 20 to 25 minutes. Cut into bars while still warm.

For nut spread, finely grind nuts and sugar in a blender, spread on bar base and bake as directed.

Variation: Bake plain and spread with jam or cinnamon-sugar.
