1. Season the chicken cutlets with pepper. Peel and core the apple and cut it into «-inch dice.
2. Heat 3 tablespoons of the butter in a large frying pan. Add the chicken and cook over medium heat until lightly browned and cooked through, about 2 minutes per side. With tongs, remove the chicken to a serving plate, leaving the drippings in the pan.
3. Melt the remaining 1 tablespoon of butter in the frying pan. Add the diced apple and cook over medium heat, stirring frequently, for 2 minutes. Add the stuffing mix and broth and reduce the heat to medium-low. Cook, stirring, until the liquid is absorbed but the stuffing is still moist, about 2 minutes.
4. Spoon the stuffing over the chicken and serve.
