Chicken with Apple Cornbread Stuffing

Yield: 4 Servings
1lb Chicken cutlets
  Freshly ground pepper
1sm Tart apple (eg Granny Smith)
4tablespoon Butter
cups Cornmeal stuffing mix
1cups Chicken broth

1. Season the chicken cutlets with pepper. Peel and core the apple and cut it into -inch dice.

2. Heat 3 tablespoons of the butter in a large frying pan. Add the chicken and cook over medium heat until lightly browned and cooked through, about 2 minutes per side. With tongs, remove the chicken to a serving plate, leaving the drippings in the pan.

3. Melt the remaining 1 tablespoon of butter in the frying pan. Add the diced apple and cook over medium heat, stirring frequently, for 2 minutes. Add the stuffing mix and broth and reduce the heat to medium-low. Cook, stirring, until the liquid is absorbed but the stuffing is still moist, about 2 minutes.

4. Spoon the stuffing over the chicken and serve.
