Cut peeled and cored apples in medium slices and place in a 3-quart saucepan with water; heat to boiling. Reduce heat to low, cover and simmer 7-10 minutes until apples are tender. Stir in sugar, lemon juice and cinnamon. Refrigerate in a covered dish until ready to serve.
