Frozen cilantro puree retains the original flavor almost as well as if it were fresh.
1. Coarsely chop the cilantro and onion. 2. Put both into a blender or food processor and puree them. 3. Scrape out the puree and freeze in ice-cube trays. 4. Pop out of ice-cube trays and store in firmly sealed bags or small freezer containers.
makes about 12 ounces : 1 cilantro ice-cube = enough for an average recipe for 4
