Heat 1 tablespoon olive oil in a nonstick skillet and saute 2 cups fresh corn kernels until they begin to brown. Add ¼ cup sliced scallions and 1 chopped and seeded plum tomato and cook 2 minutes. Season to taste with salt and pepper. Sprinkle with 3 tablespoons fresh cilantro. Makes 4 servings.
