Eggplant Au Gratin

Yield: 6 servings
1  Eggplant (about 1 lb.)
  Salt to taste
½lb Fresh Mushrooms
tablespoon Butter
  Juice of ½ lemon
tablespoon Flour
½cups Milk
¼cups Heavy cream
  Pepper, to taste
¼teaspoon Nutmeg
  Tabasco, to taste
1  Egg, lightly beaten
2tablespoon Bread crumbs
2tablespoon Parmesan cheese

1. Preheat oven to 425 deg. 2. Peel the eggplant and cut the flesh into 1" cubes, more or less. Drop the cubes into boiling salted water, cook about 5 minutes, just until cooked. Drain well. 3. Meanwhile, slice the mushrooms. There should be about 2 cups.
