In a shallow bowl combine lemon juice, oil, mint, garlic, thyme, fennel, sage and bay leaf. add chicken breasts and turn to coat well. cover and marinate, refrigerated for at least 2 hours or on each side until cooked through. season with salt and pepper. slice and serve.
