1. Trim hard knobs, rough ends and dirty bits, but leave any nice pink skin. Coarsely chop the ginger then mince it in a blender or food processor. 2. Scrape out the container, place in an ice-cube tray and freeze. 3. Pop out the ginger ice-cubes and store in firmly sealed freezer bags or small freezer containers.
: 1 ginger ice-cube = 1 tablespoon ginger puree
