Ham & Shrimp Creole

Yield: 6 Servings
3tablespoon Butter
2cups Canned tomatoes
cups Hot water or stock
2tablespoon Onion flakes
3teaspoon Salt
½teaspoon Sugar
1/8teaspoon Thyme
½lb Raw shrimp, peeled
3tablespoon Flour
¼cups Tomato paste
½cups Diced green pepper
2tablespoon Chopped parsley
2teaspoon Chili powder
¼teaspoon Garlic powder
2cups Diced, cooked ham
1teaspoon Lemon juice

Melt butter in a 2.5 qt heavy saucepan. Remove from heat. Blend in flour and cook over low heat until the mixture is a medium to dark brown. Remove from heat and add the next 11 ingredients. Simmer 20 minutes, covered. Add ham, shrimp and lemon juice. Cook uncovered, for 10 minutes or until shrimp turn pink. Serve over hot cooked rice.
