Lemon Sponge Pie

Yield: 1 servings
1  9" pie shell
2  Eggs, separated (room temp)
1cups Sugar
3tablespoon Flour
2tablespoon Butter, melted
1  Lemon, juice and rind
¼teaspoon Salt
1cups Milk

Beat whites until stiff and set aside. Combine all remaining ingredients with a wooden spoon. Fold in beaten egg whites and pour in shell. Bake 10 minutes in a preheated 425oF oven, then reduce to 350oF and continue baking for 20 minutes more. Cool and chill before serving.
