Marmalades are made of thinly sliced or chopped fruits. The fruits are combined with a relatively large proportion of sugar. Marmalades should be cooked until the portions of fruit are clear, and the mixture is of the consistency of jelly. Orange, lemon, or commercial fruit pectin may be added if desired, to give the consistency of jelly. Pour into freshly sterilized glasses, and cover with melted paraffin as for jelly.
