With a name like McIlhenny you know we like lamb. This well-coated leg is good either hot or at room temperature. If there's any left, it makes supurb sandwiches.
In medium bowl, combine the oil, mustard, soy sauce, garlic, Tabasco sauce, thyme and chives. Place the lamb on a rack in a roasting pan. Coat the lamb with the mustard mixture, sprinkle it with the bread crumbs, and let it stand for 1 hour.
Preheat he oven to 350 degrees F. Roast the lamb for 1-½ hours, or until a meat thermometer registers 130 degrees F. for medium-rare or 145 degrees F. for medium.
