5		Feet medium hog casings
4	lb	Opossum, trimmed of all fat
1	lb	Pork fat, cubed
2	teaspoon	Salt
2	teaspoon	White pepper
1	teaspoon	Tabasco sauce
1	teaspoon	Crushed cumin
1	teaspoon	Oregano
2	teaspoon	Sweet paprika

Prepare casings. Mix remaining ingredients, grind using the coarse disk and well browned.
