Cut meat into 4 portions. Mix flour and salt; pound into meat, setting aside remaining flour. Brown meat in a small amount of hot shortening. Place in a shallow baking dish. Mix remaining flour with drippings in skillet. Add remaining ingredients, except cheese. Cook, stirring constantly, until misture boils.
Pour sauce over meat in baking dish. Cover and bake at 350 degrees until tender, about 2 hours. Top with cheese; return to oven for a few minutes. BH&G All-Time Favorites, 1971
