Put drained pineapple into a salad bowl. Add cheese and marshmallows. Toss lightly. Make a dressing with the juice, sugar, flour, egg yolk, and salt. If the dressing is too thick, add water. Pour over the pineapple mixture and stir gently. Chill before serving.
