Potato Pancakes German Style

Instructions:
Yield: 4 servings
cups Potatoes; (2 large) *
3cups ;water
1teaspoon Lemon juice
1  Potato; boiled, mashed
1  Egg; large, beaten
2tablespoon Milk
½teaspoon Salt
1  Vegetable oil; as needed
* Potatoes are grated on medium grater. 2½ Cups Approx.

++++ Grate raw potatoes into water to which lemon juice has been
added. Place potatoes in a strainer or cheese cloth and drain off
liquid. Drain well. Beat raw and cooked potatoes with egg, milk, and
salt to form a batter. Using 3 T oil for each batch, drop batter for 3
or 4 pancakes at a time in hot oil in a large frypan. When firm on
the bottom side, loosen edges and turn. Brown on other side. Remove,
drain on paper towel, and keep warm. Continue until all batter is
used. Serve immediately. NOTE: If potato cakes are served with meat,
sprinkle with salt. Sprinkle with sugar if served with applesauce.

½ c Sliced fresh mushrooms
2 ea Green onions, sliced
1 T Butter or margarine
2/3 c Water
1/3 c Regular long grain rice
¼ ea Med. bell pepper
*
¼ t Salt
¼ t Dried sage, crushed
2 t Snipped parsley


* Bell peppers can be any color, but should be cut into 1-inch
julienne strips.

In a 1-quart casserole micro-cook mushrooms, onion and butter or margarine, uncovered, on 100% power for 1½ to 2½ minutes or till vegetables are tender. Stir in water, rice, bell pepper strips, salt, and sage. Micro-cook, covered, on 100% power for 2 to 3 minutes or till boiling. micro-cook, covered, on 50% power for 14 to 16 minutes or till rice is tender and liquid is absorbed, stirring once. Stir in parsley. Let stand, covered, for 5 minutes.
