1. Combine 2 cups of all-purpose flour, with 1 tablespoon active dried yeast, 1½ cups water and 1 teaspoon salt in a bowl. Beat to mix, cover and set aside in a warm place until it has doubled in size, about 20 minutes.
2. Heat up oil in the big frying pan. Add the onion and the garlic and fry during 5 min. up to softness. Cover a frying pan and to prepare for 7-8 min.
3. Divide the dough into 3 equal portions. Press each portion of dough into a 9 inch round. Place each round on an oiled baking sheet. Brush the tops with olive oil. Place on the dough the onion and the garlic. Set the focaccia aside in a warm, draft-free place until it has doubled in size, about 40 minutes.
4. Meanwhile, preheat oven to 425 degrees F. Bake until golden brown on top, about 25 minutes.
