ROSIE'S CORN CHOW… INGREDIENTS:

Rosie's Corn Chowder (Oprah's Favorites)

Instructions:
Yield: 4 servings
1  Vegetable spray
1cups Chopped onion
6cups Fresh corn from the cob
3cups Chicken stock
½cups Red bell pepper
½teaspoon Fresh rosemary (¼ t dried)
½teaspoon Dried thyme
1/8teaspoon Fresh ground black pepper
1  Cayenne pepper to taste
1tablespoon Fresh chopped basil

Heat sauce pan and spray 2 times with oil.Saute onions 5 min, add 4 cups corn and saute 4 min. Add 2 cups of stock and cook 20 min. till corn can be mashed witha fork. Put in blender untill smooth and return to pan.Add bell pepper and seasonings except basil and the remaining cup of stock and corn. Cook 10 minutes, garnish with basil.
