Shanghai Pork Stew

Yield: 4 Servings
1lb Boneless Pork; cut into 1"
2  Cloves Garlic; minced
½teaspoon Orange Peel; grated
2tablespoon Cornstarch
1can Beef Broth
1teaspoon Ground Ginger
¼teaspoon Salt
1cups Carrots; sliced ½" thick
1cups Red and Green Bell Peppers;

In a 3 quart microwave-safe casserole dish, combine pork, garlic and orange peel. Cover; microwave on HIGH (100%) for 7 minutes, or until pork is no longer pink, stirring once during cooking. Drain. Stir cornstarch and water until smooth. Add to pork mixture along with remaining ingredients. Cover; microwave on HIGH (100%) for 9 minutes, or until vegetables are tender, stirring once during cooking.
