Smoked Salmon Spread

Yield: 2 cups
1cups Ricotta cheese
2oz Smoked salmon; chopped
2tablespoon Fresh dill; chopped
2tablespoon Capers, drained
2teaspoon Lemon juice
2teaspoon Ketchup
1teaspoon Prepared horseradish

In food processor or blender, puree ricotta until smooth. Add smoked salmon, dill, capers, lemon juice, ketchup and horseradish, using on/off motion. Process until lightly mixed. Season with salt and pepper to taste.

Use to spread on toast or to stuff mushrooms or cherry tomatoes or Belgian endive leaves. Smoked trout can be used instead of salmon.
