SQUASH PUDDING INGREDIENTS:

Squash Pudding

Instructions:

1  Onion; chopped
1  Green pepper; chop
4tablespoon Raisins
3cups Cornmeal
2tablespoon Water
  Salt and pepper
1  Acorn squash; cook, puree
10  Capers
1teaspoon Thyme
3  Olives; chopped

Saute onions and peppers in 1tb oil. Add pureed squash, capers, thyme and olives. Mix. Combine cornmeal, water, salt and pepper. On piece of foil place cornmeal mixture in a roll. Make a trough lengthwise down the center. Fill with cooled squash mixture. Use foil to roll up. Place foiled-wrapped roll in 350~ oven and bake for 30 minutes.
