STEFFADO INGREDIENTS:

Yield: 4 servings
1  Rabbit (or Chicken)
½cups Olive Oil
½cups Vinegar
1can Tomatoes
1cups Beer (omit if canned
2md Onions
  Herbs (oregano, bay leaf,
1cups Garlic (yes, a cup, or more)
4  Bunches spinach (2 cans

Combine all ingredients together, EXCEPT spinach, in a Dutch oven and boil for 1 to 3 hours. Remove rabbit bones, add spinach, and cook until tender. Add more beer if additional liquid is needed. Serve with lemon, French bread, and Parmesan cheese.
