Lightly beat 3 eggs and pour sugar and maple syrup mixture into eggs. Add 1 tsp. of vanilla and ½ cup pecans or put in bottom of unbaked pie shell. Makes 1 9 inch pie. Bake in preheated oven for 10 minutes at 425 degrees and then lower to 325 degrees for 35 minutes. Bake until knife will come out clean, I use a tooth pick! Try pricking the unbaked pie crust with a fork and spread lightly with egg white and sprinkle lightly with flour so crust won't be soggy. When pie is cool slice a banana on top of pie and cover with whipped cream or ice cream.
