This recipe is for oven baking only.
Beat the egg yolks with half of the milk. Add flour, sugar, and salt; beat well. The mixture will be stiff. Add remaining milk and cream gradually, then melted butter. Beat egg whites stiff. Fold into crepe mixture. Bake in 2 8-inch-round baking pans, buttered and preheated, in 375F oven for 25 to 30 minutes.
Serve with precooked sliced and sweetened apples, rhubarb, strawberries, bluberries, or what have you, which may be added after baking or before (in which case they will sink into the batter for a different but delicious result).
