Beat eggs and add flour and sugar. Add tomato juice and water or stock, salt and pepper and melted, cooled butter. Bake according to directions for Basic Crepes.
If tomato juice is particularly thick, use half tomato juice and half water.
Variations: Up to ½ cup of grated swiss or parmesan cheese may be added. Herbes of your choice, about ½ teaspoon such as basil or oregano, may be added.
Suggested Uses: In any recipes with tomato sauce such as pizza crepes or crepes with spaghetti sauce.
