VEGETABLE PAELLA INGREDIENTS:

Vegetable Paella

Instructions:

¼teaspoon Saffron; soak in
½cups Water
2  Red bell peppers; dice
1cups Cauliflower florets
1cups Carrots; diced
1cups Onion; diced
2cl Garlic; minced
cups Raw rice
3cups Chicken broth
2cups Spinach leaves
1cups Tomatoes; drained
  Paprika
  Salt
1can Cannelini beans
½cups Frozen peas

Saute in broth, cauliflower, carrots, red peppers, onions, garlic and rice. Cook until cauliflower is soft and rice is al dente. Add tomatoes, saffron, beans, peas, spinach, salt and paprika. Simmer a few minutes until spinach
