Everything's warm and appealing about this old-fashioned apple cake: the sweet, fragrant spices, the apples and the brown sugar and walnut topping. Pears may be used in place of apples.
1. Preheat oven to 350 degrees. Lightly butter 8-inch square baking pan or spray with nonstick cooking spray. 2. Sift together flour, sugar, cinnamon, baking soda, salt, cloves and nutmeg into large mixing bowl. Stir to blend. 3. In another bowl, stir together egg substitute, applesauce, apple juice and vanilla. Stir into dry ingredients just until blended. Fold in apples. Spoon batter into prepared pan. 4. Combine brown sugar and walnuts, if using. Sprinkle evenly over top of batter. Bake for 40 to 45 minutes, or until wooden pick inserted in center comes out clean. 257 calories per serving; 4 g pro, 1 g fat, 61 g carbos, 254 mg sodium, 0 mg cholesterol
